Goat Cheesy Purple Potatoes

First of all…aren’t purple potatoes pretty? I remember the first time I cut into one I was anticipating it to be white inside with only purple skin, but lo and behold…I found deep rich purple color all the way through. Beautiful! To me, this just says N-U-T-R-I-E-N-T RICH!

SONY DSCWe’ve harvested the last of our purple potatoes, and now have an abundance of them stored away for later…hmmm the recipe ideas start a brewing. 😉

I have to give credit of this recipe to Grey because he did mention how good goat cheese would be paired with these earthy potatoes.

Goat cheese is something that is fairly new to me, it’s only within the last year or so that I’ve tried it and used it in a lot of our cooking. We’ve even been adding it to our favorite pizza that originally only had traditional mozzarella and Parmesan.

SONY DSCThey can be made anyway but we served them scalloped. I like this recipe because it is simple enough to make for your family on a weeknight and fancy enough to make for guests on the weekend. Hope you enjoy!

Goat Cheesy Purple Potatoes

Serves: 6 Prep time: 15 minutes Cook time: 35-40 minutes

Ingredients  

6 large purple potatoes, scalloped

2 tablespoons olive oil

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper

3 sprigs of fresh thyme, finely chopped

½ cup goat crumbled goat cheese

Directions:

Preheat oven to 400 degrees Fahrenheit. Put potatoes in a large bowl and season with olive oil, salt, pepper, and thyme. Toss to coat all potatoes. Layer ⅓ of the potatoes in a 8×8 in baking pan. Sprinkle with goat cheese. Repeat with the remaining two layers. Cover with aluminum foil and bake for 35-40 minutes or until the potatoes can be easily pierced with a fork.
