Banana nut bread/muffins are something we make a lot in our house. Bananas are always one of the staples when we go on our weekly grocery shopping trip.

We usually do pretty good (especially because we’ve been making these smoothies lately,) but sometimes a few just get away from us.SONY DSC

I have to admit, I’m a little picky about my bananas, once they get past the perfectly yellow with MAYBE A FEW brown spots…I don’t prefer to eat them plain this way. That is where these easy banana nut muffins come to the rescue!SONY DSC

It takes less than an hour to whip these up, and I feel so much better when I am able to salvage food, and not waste it. Plus they are pretty tasty…if I don’t say so myself. 😉 If you do not like walnuts–substitute with almonds, or sunflower seeds. If you don’t like nuts at all–leave ‘em out. Totally versatile and easy peasy. Enjoy!

 Easy Banana Nut Muffins

 Ingredients:

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
1/2 teaspoon pure vanilla extract
1 stick unsalted butter, at room temperature
1 cup sugar
3 very ripe bananas, peeled and mashed with a fork (about 1 cup)
1/2 cup walnut pieces

 Directions:

Preheat the oven to 350 degrees F.

Cream the butter and sugar until light and fluffy in a large bowl. Add the eggs and vanilla to the butter mixture and mix until incorporated. Add the bananas (the mixture will appear to be curdled, so don’t worry.

With a rubber spatula, mix in the flour, baking soda, and salt until just incorporated. Fold in the nuts. Spray muffin tin with non-stick cooking spray. Fill each muffin cup 2/3 full. Bake until a toothpick inserted into the center of the bread comes out clean, about 25 minutes. Cool the muffins in the pan on a rack for 5 minutes. Turn the muffins out of the pan and let cool completely on the rack. Store in a large freezer bag for up to one week. 

 Serving suggestions: Eat for breakfast on the go, or toasted with vanilla ice cream for dessert!
