Fresh Sweet Red Pepper Salsa

SONY DSCDuring the summer, we make lots of fresh salsa. I like to add different tropical fruit like mango, or pineapple when we are serving it with chips or over chicken or fish.SONY DSC

Simple salsas like our pico de gallo or this simple fresh sweet red pepper salsa are so versatile which make them handy in the kitchen. I use this one to make my guacamole recipe, I’ll be sharing tomorrow. But it is also good on eggs, rice & beans, tacos, enchiladas, etc.SONY DSC

I made a big bowl of this for the Superbowl after we got home from the zoo on Sunday. Grey ate it with veggies and guacamole. I’m happy to share this recipe with you and your family.

Fresh Sweet Red Pepper Salsa


3 tomatoes, chopped

2 red bell peppers, chopped

½ cup red onion chopped

½ cup cilantro chopped

lime juice from 1 lime

2 tsp sugar

pinch of salt


Combine all ingredients in a gallon size freezer bag. Seal. Let stand at room temperature for 30 minutes. Put salsa into a bowl to serve. Can be stored in freezer bag for up to one day.
