Peanut Butter & Honey Granola Bars

SONY DSCWe’ve been on a granola bar kick lately. I wanted to start making most of our snack foods, instead of buying them since Greyson was born, because 1) it’s cheaper in most instances, and 2) I can make sure no artificial ingredients are present.SONY DSC

These granola bars only contain five ingredients and they are “no bake” making them seriously easy to throw together. The nice thing about making bars is that you can make enough for an entire month, wrap them up, and store them in the freezer, instead of pulling everything out to make them weekly. SONY DSC

These bars are sweet and nutty making them the perfect morning snack or even breakfast. Happy granola bar making!SONY DSC

Peanut Butter & Honey Granola Bars

Ingredients:

1 1/2 cups rolled oats, toasted

1 cup packed dates, pitted

1/4 cup honey

1/4 cup creamy salted natural peanut butter

1 cup roasted unsalted almonds, roughly chopped

Directions:

Preheat oven to 350. Spread oats on a baking pan and toast for 10-15 minutes (should be fragrant and golden). Meanwhile, process dates in a food processor until they are ground into small pieces.

Put dates, almonds, and oats into a large bowl and set aside. In a small saucepan, warm honey and peanut butter over low heat, stir until just combined. Pour the honey and peanut butter mixture into the bowl with the oats, dates, and almonds.

Mix with a rubber spatula making sure that the dates are spread evenly throughout the mixture. Line an 8×8 pan with aluminum foil or parchment paper so they are easy to lift out of the pan. Pour mixture into the pan and pack down with a large spoon, until level and compact. Cover and put into the freezer for 20 minutes to set up. Remove pan and lift out (soon to be!) bars, and cut into even pieces to desired size. (Mine yielded 9 bars.)

I immediately put them individually into sandwich sized Ziploc bags and stored them in the refrigerator, so they were an easy snack to grab.
