Lemony Garlic-Parmesan Broccoli

SONY DSCThis recipe was created while Grey and Greyson were cleaning up the garden. I was wanting a light lunch, and this managed to do the trick. I ended up bringing a big plate of it outside for all of us to share.SONY DSC We all agreed it should be added to our “favorites list.” This could be served alongside a main dish or easily be a light lunch (or snack!) Lemony Garlic-Parmesan Broccoli


1 crown of broccoli, washed and cut into florets (about 3 cups raw)

2 tablespoons extra-virgin olive oil

2 garlic cloves, minced or crushed

½ teaspoon red pepper flakes

fresh lemon juice from ½ of a lemon

one pinch of granulated sugar

¼ cup of freshly grated parmesan cheese


Put broccoli in a steamer basket over boiling water. Steam, covered, 4 minutes or until desired tenderness. Meanwhile, heat a small skillet over medium heat. Add olive oil garlic and red pepper flakes. Cook for 1 minute or until garlic is fragrant. Add lemon juice and cook for 30 seconds more. Remove from heat.

Add broccoli to the skillet when it is finished steaming. Add on pinch of granulated sugar and half of the parmesan Stir to coat broccoli in lemon garlic mixture and the cheese is melted.

Serve onto a plate and sprinkle the remaining parmesan cheese on top.

Serves: 2 (as a side) or Serves: 1 (as a meal)
