Pico De Gallo.

SONY DSCSalsa time! I haven’t made fresh salsa since I made our mango salsa with black-eyed-peas when Grey and I first moved into our current little home… and that was three months ago! I wanted to share a more basic fresh salsa that we enjoy on a larger variety of food. SONY DSCWe were definitely overdue for some chips and pico de gallo. SONY DSCI like making a big ‘ol bowl of it, when I make it, because it is great on tacos, enchiladas, chicken, and even eggs for breakfast. Heck, I could just eat this stuff with a spoon. 🙂 SONY DSCI was in the mood to make some arroz con pollo 😉 so I set some aside to cook with, and we ate the rest with our homemade corn tortilla chips.SONY DSC

 Pico De Gallo

Ingredients:

2 medium tomatoes, diced

½ green bell pepper, diced

½ cup cilantro, chopped

½ small red onion, diced

juice from 2 limes

2 tablespoons granulated sugar

salt and pepper

 Directions:

Combine all ingredients in a large bowl. Cover and refrigerate for at least 1 hour before serving.
