Homemade Corn Tortilla chips…Why not? We had almost an entire package of corn tortillas in our refrigerator, and no other plans for them. Might as well make chips! This is seriously so simple, I feel silly even writing a recipe for it…but I just had to because they are delicious! They are much thicker than most store-bought varieties, and you can fry, and salt, them to your liking. I cut ours into strips because…well…that was the easiest. But you can cut yours into triangles, squares, circles…. whatever you fancy. It all tastes the same. Just make sure to serve these with some awesome salsa, guac, or tasty dip to get the entire chippy experience out of your homemade tortilla chips!
Have a great Monday guys!

Corn Tortilla Chips
Vegetable oil, for frying
Fresh corn tortillas
Heat 1-inch of vegetable oil in a large frying pan over medium-high heat.
Arrange the tortillas in a stack and cut into equal size pieces (strips, triangles, etc.) Fry a few chips at a time, turning occasionally with a slotted spoon, until crisp and lightly browned, about 1 minute or less. Drain chips on a paper towel-lined plate; sprinkle lightly with salt and store in an airtight container.
