Whole-Wheat Pumpkin Oat Cookies

…and let’s celebrate with these cookies.SONY DSC I made these Labor Day weekend for a small family gathering. They were just out of ingredients we had in the house since I decided to bring them last minute. 😉 SONY DSCSuper simple, and if your anything like me, you probably already have everything you need in your cupboards.

Whole-Wheat Pumpkin Oat Cookies

Ingredients:

2 cups of Whole wheat flour

1 teaspoon of baking soda

1 teaspoon of cinnamon

1/2 teaspoon of Nutmeg

1 teaspoon pumpkin pie spice

1 stick of butter, softened

1 cup of packed brown sugar

1/2 cup of white sugar

1 cup of pureed pumpkin

2 eggs, room temp

1 teaspoon of vanilla

2 cups of Quick Oats

Directions:

Preheat oven to 350F degrees. Mix together dry ingredients (minus oats) in a medium bowl. Beat Butter, and sugars until creamy in a large bowl. Add the pumpkin, eggs and vanilla. Stir to combine. Add dry mixture to the wet ingredients. Add oats 1 cup at a time, batter should appear very sticky. Drop 1 tablespoon-sized amount of dough onto a waxed paper lined cookie sheet.

Bake for 10-12 minutes. Once removed from the oven, let the cookies rest on the sheet for 4-5 minutes before transferring them to a cooling rack. Enjoy!
