Chicken Salad with Cranberries, Walnuts, and Apples

SONY DSCSONY DSCNothing special here today, just a simple recipe to get you (and me) through the week. This is a great dinner option, because it can be made ahead of time. Throw everything into a big bowl, slap a lid on it, and itโ€™s ready to go! These recipes are essential because cooking dinner at home is important to me, but sometimes life just gets too busy to spend an hour or two in the kitchen every night.SONY DSC

This is a healthy option that I can have in the refrigerator for Grey when he gets home if I am out of the house around dinner time. My favorite part of this dish is the textural element. The crunchy walnuts, celery, and apple contrast nicely against the other ingredients.SONY DSC

Hope you enjoy!
