Nothing special here today, just a simple recipe to get you (and me) through the week. This is a great dinner option, because it can be made ahead of time. Throw everything into a big bowl, slap a lid on it, and it’s ready to go! These recipes are essential because cooking dinner at home is important to me, but sometimes life just gets too busy to spend an hour or two in the kitchen every night.
This is a healthy option that I can have in the refrigerator for Grey when he gets home if I am out of the house around dinner time. My favorite part of this dish is the textural element. The crunchy walnuts, celery, and apple contrast nicely against the other ingredients.

Chicken Salad with Cranberries, Walnuts, and Apples
1 1/2 lbs cooked chicken breast
1/2 cup dried cranberries
1 cup of celery, chopped
3/4 cup red grapes, halved
1/2 cup walnuts halved
1 avocado, peeled, pitted, and diced
1 granny smith apple, peeled, cored, and chopped
3/4 cup mayonnaise
juice from one lemon
2 tbs granulated sugar
salt and pepper
In a large bowl, combine the chicken, cranberries, celery, grapes, walnuts, avocado, and apple. Give everything a good toss, being sure not to mash the avocado. In a separate small bowl, combine the mayonnaise with the lemon juice. Season to taste with salt and pepper.Pour the mayonnaise and lemon juice mixture into the large bowl with the chicken, fruits, and vegetables and combine everything well so that all the ingredients are coated with the dressing.
