Spinach and Sun-Dried Tomato Pizza

SONY DSCOnce a week Grey and I have “pizza night.” I never thought that this would happen when we got married because Grey is quite health conscious, and pizza usually doesn’t fall in line with his healthy options list. Somehow, he requests this pizza every week. This recipe starts with a store bought crust from Alvarado street bakery…which is delicious!SONY DSCIt is a sprouted grain pizza crust that is so light and flaky when it comes out of the oven…it makes this entire dinner! Then we use our favorite sun-dried tomato spread instead of pizza sauce. This adds a super “tomatoey” flavor to this pizza. We use this spread for a lot of different Italian style meals.SONY DSC

Then we add all the veggies: mushrooms, olives, garlic, sun-dried tomatoes, etc. Add some cooked chicken breast, and then top with tons of spinach, mozzarella and Parmesan cheese. SONY DSCIt only takes about 20 minutes to bake and makes eight slices for a regular serving size, and 4 slices for Grey and I’s serving size ;). This recipe is totally flexible, so if you don’t like olives–leave ‘em out! I do suggest using this crust and sun-dried tomato spread. They are delish! SONY DSC

Spinach and Sun-Dried Tomato Pizza

(Printable Version) 

Ingredients:
1 Alvarado Street Bakery Pizza Crust
1 9 oz jar of California Sun Dry sun-dried tomato spread
¼ cup chopped kalamata olives
2 cloves of garlic, minced
1 cup of chopped crimini mushrooms
¼ onion, sliced very thinly
1 chicken breast, cooked and shredded
1 cup of mozzarella, grated
½ cup fresh Parmesan, grated
1 tsp dried Italian Seasoning
coarsely ground black pepper

Directions:

Spread sun-dried tomato spread evenly over pizza crust. Sprinkle about ¼ of the mozzarella cheese over spread. Add olives, mushrooms, garlic, onion, and chicken making sure to layer each ingredient evenly over crust. Top with remaining mozzarella and Parmesan cheese. Season with Italian Seasoning and black pepper. Bake for 20 minutes, or until cheese is melted and bubbly. Cool for 10 minutes before slicing. Serve and enjoy!
