Whole-Wheat Blueberry Pancakes with Spiced Blueberry Compote

SONY DSCThere’s nothing quite like pancakes on Saturday morning. It reminds me of being a kid watching my older sister pour batter onto a hot griddle while my brother and I would anxiously await the little bubbles to rise to the top of the cake indicating the “flip time.” We used to always make the “super yummy pancakes” recipe out of a local cookbook called Elephant Stu. Now that I’m all grown up 😉 I like these whole wheat pancakes. Although our super yummy pancakes made with white flour and sugar will always have a special place in my heart, I actually prefer pancakes made with whole wheat flour because they have a much heartier taste and they tend to keep me full

This recipe is simple, vegan, and totally delicious. The fresh blueberries in the batter add bursts of flavor within the pancakeSONY DSC

…and the homemade warm blueberry compote makes me want a cup of black coffee to top off the: “I’m in a pancake house” feeling.

SONY DSCWhole Wheat Blueberry Pancakes with Spiced Blueberry Compote

(Printable Recipe) 

1 cup whole wheat flour
½ cup rolled oats
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
1 tablespoon packed brown sugar
1 ¼ cup water
1 tablespoon olive oil plus 1 tablespoon for cooking
1 teaspoon pure vanilla extract
1 cup chopped fresh blueberries

for the compote
1 cup fresh blueberries
¼ cup pure maple syrup
½ cinnamon stick


Combine first seven ingredients in a large bowl and combine with a wire whisk. Add water olive oil, and vanilla and whisk into the flour mixture. Add blueberries and stir until incorporated. Heat remaining tablespoon of oil over a non-stick skillet over medium heat. Add pancake batter one ladle at a time. Cook on each side for about 3-4 minutes or until golden brown. Remove and store on a wire rack. For the compote combine all ingredients in a small saucepan over medium heat and stir until it thickens and turns dark blue about 7-8 minutes. Remove cinnamon stick. Serve warm compote over pancakes. Enjoy!
