I am so excited for fall. I can’t wait to gather pumpkins from a pumpkin patch, drink hot apple cider, and bake yummy treats for my family. There is nothing better than walking into a warm house, in autumn, to the smell of home cooking. This dish is a light and healthy, meal that incorporates the fall-time favorites: apples and yams. I am happy to share this recipe with you. The countdown to fall begins!
Start by adding the grapeseed oil to a large non-stick skillet over medium heat. Season the chicken with salt and pepper. Add the chicken to the pan to brown for about 5 minutes, making sure not to crowd (It won’t brown properly.) Slice onion, and chop yam.
