Chicken, Yam, and Apple Skillet

I am so excited for fall. I can’t wait to gather pumpkins from a pumpkin patch, drink hot apple cider, and bake yummy treats for my family. There is nothing better than walking into a warm house, in autumn, to the smell of home cooking. This dish is a light and healthy, meal that incorporates the fall-time favorites: apples and yams. I am happy to share this recipe with you. The countdown to fall begins!

Start by adding the grapeseed oil to a large non-stick skillet over medium heat. Season the chicken with salt and pepper. Add the chicken to the pan to brown for about 5 minutes, making sure not to crowd (It won’t brown properly.) Slice onion, and chop yam.

Next, remove chicken from skillet and drain any liquid that has accumulated. Add the brussel sprouts, onion, and yam. Cook for another 5 minutes. Chop apple, and garlic, add to skillet.

Pour wine over everything in skillet, season with thyme and cinnamon. Let simmer for another 5 minutes or until the potatoes are tender. Add the chicken back to skillet for another minute. Serve.
