The Best Pancakes…Ever.

Okay…so the title was a bit of an overstatement, but they are super yummy pancakes. We eat these pancakes about 2-3 times a week, and alter the topping. Our all time favorite is sliced bananas, granola, and honey. The one I have pictured here might be second best, instead of granola we used fresh blueberries resulting in a blueberry-banana style pancake. Yum!

Here’s what you’ll need:

¾ cup whole-wheat flour

¾ cup rolled oats

1 teaspoon ground cinnamon

½ teaspoon ground allspice

1 tablespoon brown sugar

½ teaspoon baking powder

½ teaspoon baking soda

1 cup water (or to desired consistency)

1 teaspoon vanilla extract

2 teaspoons olive oil

1 teaspoon olive oil (for cooking)

Desired topping

 Let’s make pancakes:

In a large mixing bowl combine all dry ingredients. Slowly add water (making sure not to let the batter get to thin.) Add vanilla extract, and olive oil. Whisk all ingredients together. Let stand for five minutes Drizzle olive oil in a large non-stick skillet, using a ladle add batter cooking 2-3 pancakes at a time. When little bubbles form at the top, flip to the other side and cook for a minute or two more. Keep finished pancakes in the oven at 200 degrees Fahrenheit. Top with favorite pancake topping.
