Yeah. You heard it right. Chocolate-Chip Zucchini Cake. It’s actually whole-wheat-chocolate-chip-zucchini cake. I have to say this is one of my favorite recipes so far for three reasons: 1) It uses up the last zucchini I have in my refrigerator 2) It includes semi-sweet chocolate (which I love) and 3) it is made with whole-wheat flour so it’s healthy (Ha. As healthy as cake can get.)
But really, besides the chocolate this cake is not that bad for you. It uses olive oil instead of butter, and uses vanilla yogurt to sweeten the cake, ultimately lowering the sugar input.
It’s also a good option for sneaking veggies in a child’s diet. Some of the ingredients include: eggs, sugar, low-fat vanilla yogurt, olive oil, vanilla extract, and (of course): zucchini.
The last ingredient added to the mixture is the treat of the dish: the semi-sweet chocolate chips.
When the cake is ready, the remaining chips get poured right on top. After resting, covered for a few minutes, the chips get spread over the cake like icing.
It’s so fun…and delicious.
