Zucchini Solution # 5: Zucchini Relish

In case you are wondering, zucchini relish is exactly what it sounds like. It tastes like regular sweet pickle relish, but is made from zucchini. It comes in handy when you have a zucchini the size of your arm, and do not know how to deal with the monster (it can be made with regular size zucchini as well.) This was super easy to make. It only took about 15 minutes of active work time. About four hours total including the brine soaking, and processing.

You start by finely chopping up one very large zucchini or two medium ones. As well as one green bell pepper, one red sweet bell pepper, and one medium white onion. Then you combine everything in a large bowl to sit in a salty brine for 3 hours.

This is where the fun part begins, it’s time to make relish. In a large pot, add the vinegar, sugar, water, celery seeds, turmeric, and mustard seeds. Heat on high heat until it begins to boil, then reduce to a simmer. Rinse the zucchini mixture, then add to the rest of the ingredients on the stove top. Now bring everything to a boil, and reduce for ten minutes.

That’s it! The only thing left is filling and processing your sterilized jars. Voilà, zucchini relish. Ready to go for: sandwiches, hot dogs, or your favorite cut of meat.
