Zucchini Solution # 4: Zucchini Pancakes

I thought of this recipe this morning when I got out our big pancake bowl, spatula, and all the ingredients to make our usual pancakes. As I started to mix all the ingredients together and thought: why not? Why not just through some zucchini into this batter, and make these zucchini pancakes.

So I got out one (out of one hundred) zucchini out of the refrigerator, shredded it and tossed it in. Hmm. This could be good. If only I had some…walnuts! Zucchini-walnut-pancakes. No we’re talkin’. Now for the dressing. Usually on regular pancakes, our favorite topping is: sliced bananas, granola, and drizzled honey, but for these…I’m thinking apple cinnamon compote.

I got out a red delicious apple, chopped it up, threw it in a saucepan with cinnamon, water, and a little brown sugar. I poured, flipped, and transferred the pancakes to a plate. Once the apples were softened and delicious, I poured them over the top, and poured myself a cup of coffee.

 

Ingredients:

1 cup whole wheat flour

¾ cup rolled oats

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

¾ cup shredded zucchini

1 ¼ cup water (or to desired consistency)

1 tablespoon olive oil

1 tsp vanilla

½ cup chopped walnuts

2 tsp olive oil

Apple cinnamon compote

Directions:

Mix first six ingredients in a large mixing bowl. Work in remaining ingredients. In a large non-stick skillet add olive oil, and heat over medium heat. With a ladle pour pancakes one, two, or even three at a time and let cook on first side until small bubbles form in the batter. Flip and cook for about 45 seconds to a minute on second side. Keep completed cakes warm in the oven at 200 degrees Fahrenheit.

Apple Cinnamon Compote:

Ingredients:

1 apple (your favorite works best!)

2 tbsp water

½ tsp cinnamon

1 tablespoon brown sugar

Directions:

Chop apple, add into a saucepan with remaining ingredients. Bring to a boil, and reduce to a simmer to let apples soften and flavors strengthen for about five minutes. Pour over zucchini-walnut-pancakes.

Whole-Wheat-Zucchini-Walnut-Pancakes=Breakfast. Yum.
